Ingredients:
For the Cake:
3 cups all-purpose flour
1 ½ teaspoons baking soda
¼ teaspoon salt
¾ cup margarine
2 ¼ cups white sugar
3 eggs
2 teaspoons vanilla extract
1 ½ cups eggnog
1 ½ cups mashed bananas
For the Frosting:
½ cup butter softened
1 (8 ounces) package of cream cheese, softened
1 teaspoon vanilla extract
3 cups confectioners’ sugar
Directions:
Prep: Preheat oven to 325°F (165°C). Grease and flour a 9×13-inch pan.
Cake Batter: In a bowl, mix flour, baking soda, and salt. In another bowl, cream margarine and sugar until fluffy. Beat in eggs one at a time, and add vanilla. Alternately mix in dry ingredients and eggnog into the creamed mixture. Fold in mashed bananas. Pour into the prepared pan.
Baking: Bake for about 1 hour until a toothpick comes out clean. Cool on a rack.
Frosting: Beat butter and cream cheese until smooth. Add vanilla and confectioners’ sugar; beat until creamy. Spread over cooled cake.
