  • Cooking spray or oil, for greasing muffin tin

Glaze (Optional):

  • 1/4 cup tomato sauce or ketchup
  • 1 tablespoon maple syrup or brown sugar
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
  2. In a large mixing bowl, mash the cooked lentils with a fork or potato masher until they are partially broken down.
  3. Add the cooked quinoa, chopped onion, minced garlic, grated carrot, chopped celery, tomato sauce (or ketchup), soy sauce (or tamari), Dijon mustard, nutritional yeast (if using), dried thyme, dried oregano, smoked paprika, salt, and pepper to the bowl with the mashed lentils. Mix everything until well combined.
  4. Divide the mixture evenly among the prepared muffin cups, pressing it down firmly into each cup.
